The Fruit

Red Papaya.

Harvest season

Available through much of the year [Season window to be confirmed]

Red papaya (Carica papaya) gives a smooth, low-fibre puree with a deep orange-red tone and a mild, honeyed sweetness. Its gentle flavour makes it an easy partner in blends, while its colour does a lot of work on its own — useful in nectars, smoothies, dairy, baby food and fruit preparations.

The same fruit is also supplied as a concentrate. Evaporating water after pulping raises the Brix, so each drum carries more fruit solids: less weight and volume shipped and stored for the same finished-product output, which matters on export programmes.
